April 30, 2019, the closing ceremony of the 6th St. Petersburg Restaurant Festival, dedicated to the Year of Theater in Russia, took place.
Within the framework of the solemn event, the first deputy chairman of the Committee for External Relations of St. Petersburg, Sergey Markov, told the guests of the ceremony about the departmental project of "St. Petersburg Cuisine" Committee, the implementation of which is aimed at promoting St. Petersburg as the culinary capital of Russia
and attracting guests to our city through gastronomic tourism.
It was noted that the peculiarities of true Petersburg cuisine are the connection with the history and legendary personalities of the Northern capital, the use of local and regional products, as well as compliance with all the basics of traditional Russian cuisine with the addition of French refinement.
Sergey Markov said that at present dishes of St. Petersburg cuisine are represented by more than 30 restaurants of the city, and some institutions, observing the theme of the restaurant festival, do not forget about the St. Petersburg traditions.
At the end of the ceremony in the nomination “St. Petersburg cuisine”, the restaurants “Metropol” and “Palkin” were awarded with a special prize from the Committee for External Relations of St. Petersburg for their contribution to the revival of the gastronomic traditions of our city.
The Metropol restaurant presented in its festival set such St. Petersburg dishes as: saber (fr. Sablé, “sand”) with black truffle and blue cheese cream, calf cheeks, spread with vegetables and Demiglas sauce (Antoine Karem sauce), and also dessert “Anna Pavlova”.
In turn, the restaurant “Palkin” offered its guests mullet under a creamy backstage, stewed cabbage soup with sauerkraut, rasped veal with spelled cheese and ice cream with cloudberry jam.
Most of the participants in the “St. Petersburg Cuisine” nomination are the partner restaurants of the Departmental Project Implementation Committee. In the nomination for this year, the restaurants Geese-Swans, Flying Dutchman, Pechorin, Russkaya Ryumochnaya No. 1, Severyanin, Sytin, Tsentralny, and Fyodor Dostoevsky fought for the special prize of the Committee.".
For reference: As part of the annual St. Petersburg Restaurant Festival, the nomination “St. Petersburg Cuisine” was established at the initiative of the Committee for External Relations of St. Petersburg in 2016. Traditionally, the special prize of the Committee is awarded to restaurants, the festival menu of which fully corresponds to the concept of the project and corresponds to the ideology of Petersburg cuisine.
